If you’ve ever spent an afternoon at the Iowa State Fair, the odds are good that you’ve encountered the delicious smells and flavors wafting from the Iowa Turkey Federation’s Turkey Grill. Now, you can grill up this savory, tender turkey tenderloin year round. On a bun or stealing a nibble hot off the grill, try this dish for a quick and easy meal that’ll steal the show.
2 tbsp Lemon juice
1/4 c Soy sauce
1/4 c Vegetable oil
1/4 c Dry sherry OR red wine
2 tbsp Instant minced onion or dehydrated onion
1/4 tsp Ground ginger
1/8 tsp Black pepper
1/8 tsp Garlic powder
1 lb turkey tenderloin
4 hot dog buns
BBQ sauce as needed
Using a sharp knife and clean cutting board, slice lengthwise, each tenderloin into two thinner tenderloins, yielding four tenderloins.
In a flat non-reactive dish, whisk together the remaining ingredients to make marinade. Add turkey tenderloins and turn to coat both sides.
Cover and marinate for several hours or overnight, turning occasionally.
Remove from marinade and discard remaining marinade.
Grill tenderloins over a hot grill 6-8 minutes per side, depending on thickness. Turkey is done when the meat thermometer reaches 165 degrees F in the thickest part of the tenderloin and is no longer pink.
Serve immediately on a hot dog bun with BBQ sauce and other favorite toppings.
Turkey Tenderloins for a Crowd:
(Makes enough marinade for 20 to 30 pounds of turkey.)
For marinade, combine 1 1/2 cups lemon juice, 3 cups soy sauce, 3 cups vegetable oil, 3 cups dry sherry OR red wine, 1/4 cup instant minced onion, 2 teaspoons ground ginger, 1 teaspoon black pepper and 2 teaspoons garlic powder.
