Nonstick cooking spray, as needed
1 Large egg, lightly beaten
1/2 c steel-cut or old-fashioned oats
1 lb DARK GROUND TURKEY
1 c sweet onion, finely chopped
2 Cloves fresh garlic, minced
1/2 tsp dried oregano leaves
2 tsp dried basil leaves
1/2 tsp each kosher salt and freshly ground black pepper
2-1/2 c marinara sauce
3 c cooked thin spaghetti
1/4 c shredded Parmesan cheese
Preheat oven to 400 degrees F. Coat broiling or baking pan with nonstick cooking spray.
In a small bowl, mix egg with oats and allow oats to soften.
Meanwhile, in another larger bowl, combine turkey with onion, garlic, oregano, basil, salt and pepper. Blend in soften oats witih egg and combine well.
Shape the turkey mixture into 24 meatballs. Place on broiling pan rack and cook in the preheated oven for 12-15 minutes or until the internal temperature reaches 165 degrees F.
Assembly and Service
Over medium heat, warm the marinara sauce in a large saucepan or skillet. Add the cooked meatballs to the marinara sauce. Gently simmer allowing the flavors to blend, 15 to 20 minutes.
Portion cooked spaghetti into pasta bowls. Add meatballs with marinara sauce. Sprinkle each with Parmesan.
