Ingredients

1 lb ITALIAN TURKEY SAUSAGE

1-1/2 lbs GROUND TURKEY

1 Large sweet onion, thinly sliced

2 Large green bell peppers, seeded and chopped

2 Large red bell peppers, seeded and chopped

1/2 tsp salt

1 tsp black pepper

1/4 tsp red pepper flakes

10 hoagie rolls, split

10 oz Provolone cheese, grated

Directions


 



Squeeze sausage out of the casings into a large heavy skillet. Over medium heat, brown sausage and ground turkey, breaking up sausage and ground turkey into medium pieces. Cook until sausage is no longer pink. Remove from skillet with a slotted spoon and reserve.


In a bowl, toss vegetables together with salt, pepper and red pepper flakes.


Place one-third of the vegetable mixture in a 5 quart slow cooker.


Layer one-half of the turkey mixture atop the vegetables.


Repeat layers of raw vegetables and browned turkey, ending with a top layer of vegetables.


Cover and cook on LOW for 6 hours or until the vegetables are tender.


Serve on split hoagie rolls.


Sprinkle each sandwich with Provolone cheese.
