1 lb HOT ITALIAN TURKEY SAUSAGE LINKS
1 c jarred roasted red peppers, drained well
1 Large clove garlic, peeled
1 tsp dried oregano leaves
2 tsp canola oil
4 Steak rolls, split lengthwise and toasted
Prick sausages with a fork. In a preheated broiler or on a preheated grill, cook sausages, on a rack, 3 to 5 inches from heat. Turn to cook evenly, until brown and cooked through to an internal temperature of 165 degrees F, about 10 to 12 minutes.
Meanwhile using a food processor or blender, process drained red peppers, garlic, oregano and 1/4 teaspoon salt until mixture is smooth. With motor running, slowly add oil blending well. Over medium heat, cook sauce until hot.
Place one sausage link on the bottom half of each toasted roll and ladle with red pepper sauce.
