2 tbsp salt and white pepper mixture
50 6 oz each TURKEY BREAST CUTLET
3 lbs scallions, coarsely chopped
3 lbs small yellow onions, peeled and cubed
12 Each jalapeno, seeded and cut in chunks
12 oz jerk seasoning
6 oz dark rum
1 oz butter substitute for broiling
2 lbs mango chutney, prepared
As Needed cooked rice
Sprinkle salt and white pepper on turkey. Cover and refrigerate.
Place onions, jalapenos, jerk seasoning, and dark rum in a food processor. Process to a thick paste (add water if necessary).
Rub mixture on turkey cutlets and marinate 2 hours in refrigerator.
To Order: Apply butter substitute to broiler. Broil or grill turkey cutlets for 4 minutes per side, or until cooked throughout.
Plate and serve with 1/2 ounce of mango chutney.
Serve rice as accompaniment.
