1 tsp unsalted butter
2 Large eggs
2 tbsp 1% milk
1 (8-Inch) flour tortilla
3 tbsp shredded Cheddar cheese
1 Slice TURKEY BACON, cooked, patted dry and crumbled
1 tbsp mild taco seasoning
Place butter in a cereal bowl. Microwave on high for 20 seconds or until the butter melts. Remove the bowl from the microwave.
Break the eggs into the bowl. Add milk and beat with a fork until well blended. Microwave on high for 45 seconds. Mix with a fork. Return to the microwave and cook on High for 45 seconds. Stir, again, with a fork. Even though eggs will not appear done, eggs will become more firm during the standing time. Allow the eggs to sit for 1 to 2 minutes.
Roll the tortilla in a paper towel. Microwave on high for 10-12 seconds to just warm the tortilla. Remove from the oven and unroll the tortilla.
Place the tortilla on a plate and spoon the eggs in the center of the tortilla. Sprinkle with the cheese and top with the bacon bits. Lightly drizzle with taco sauce.
Turn up the bottom edge about 2 inches. Fold the left edge into the center and fold the right edge until it overlaps the center.
