1 lb LEMON-PEPPER MARINATED TURKEY TENDERS
6 oz olive oil, divided
3 oz carrots, peeled and sliced thinly on the bias
2 oz red pepper, seeded and julienned
2 Tablespons garlic, minced
3 oz snow peas, stemmed
2 oz oyster mushrooms, cleaned and sliced
24 oz linguini, pre-cooked
1/4 tsp red chili flakes
1/2 Each lemon juice
Cut turkey into 1-inch pieces and steam. Reserve.
Add 2 ounces of olive oil to a large saute pan. Add carrots and red peppers. Saute for 3 minutes; add garlic, snow peas, and oyster mushrooms.
When vegetables are cooked through, add turkey pieces, linguini, red chili flakes, lemon juice and remaining olive oil.
Toss well to heat through, season with salt and pepper.
