Lo Mein with Turkey

1/2 lb Chinese lo mein noodles OR fettuccine

2 tbsp vegetable oil, DIVIDED

2 lbs TURKEY CUTLETS, lbed to an even thickness and cut into 1/4-inch strips

8 oz frozen bell pepper and onion stir-fry mixture

8 oz button mushrooms, sliced

2/3 c stir-fry sauce


Cook lo mein/fettuccine according to package directions.

In a large wok, heat 1 tablespoon oil over medium-high to high heat. Add turkey and stir-fry in batches until turkey is cooked through. Remove from pan and keep warm.

In same wok, add another 1 tablespoon oil and heat. Add pepper/onion mixture and mushrooms. Stir-fry until vegetables are just crisp tender.

Add sauce and return turkey to wok. Stir-fry for 2 to 3 minutes until turkey is heated through out.

Drain noodles and add to wok, tossing to coat all surfaces with sauce.

Serve at once.
