2 lbs ITALIAN TURKEY SAUSAGE
2 Medium onions, chopped
2 Cloves garlic, minced
12 oz tomato paste
12 oz cold water
2 tbsp dry mustard
2 tsp dried oregano
1 tsp salt
1/2 tsp freshly ground black pepper
1 Cinnamon stick
2 tbsp freshly squeezed lemon juice
1 lb bow ties, cooked, drained and portioned
1 c crumbled Feta cheese
In a large skillet, over medium heat, sauté turkey sausage, onion and garlic until sausage is cooked through, stirring constantly. Drain any pan drippings.
Add tomato paste, water, mustard, oregano, salt, pepper, cinnamon stick and lemon juice. Cover and simmer for 10 minutes.
Add cooked pasta and mix well. Spoon into serving bowls and sprinkle with Feta cheese.
