1 tsp ground cumin
2-1/2 tsp dried oregano
1-1/2 tsp chili powder
1/2 tsp freshly ground black pepper
To Taste salt
10 oz mayonnaise
1/2 c green onion, sliced thin
40 Slices sourdough bread
20 Pieces leaf lettuce, washed and dried
40 Slices tomato
5 lbs SMOKED TURKEY BREAST, sliced thin
5 Each avocado, sliced into 16 wedges each
1-1/4 lbs Monterey Jack cheese, sliced
Blend cumin, oregano, chili powder, black pepper and salt into mayonnaise. Stir in sliced green onions. Cover and refrigerate until ready to use.
For each sandwich: Toast 2 slices sourdough bread on grill or under broiler.
Spread each slice of bread with 1/2 tablespoon of Mesa Sauce each, using about 1-1/3 cups of sauce.
On one slice, arrange 1 piece of lettuce, 2 slices of tomato, 4 ounces smoked turkey, 4 wedges of avocado and 1 ounce of cheese. Top with second slice of bread and cut in half diagonally to serve.
