Mexi-Corn Franks



1/2 c chopped onion

1/4 c red wine vinegar

1 tsp sugar

1/8 tsp dry mustard

1/8 tsp turmeric

1/8 tsp black pepper

1 Can (11 oz) corn with red and green peppers, drained

1 Tomato, seeded and chopped


8 Frankfurter buns


In 1-quart microwave-safe dish, combine onion and vinegar. Cover with vented plastic wrap and cook in microwave oven at HIGH (100% power) 1-1/2 to 2 minutes or until onion is tender. Stir in sugar, mustard, turmeric, pepper, corn and tomato. Cover and refrigerate overnight.

Preheat grill for direct-heat grilling. Grill franks 4 to 5 minutes.

To serve, place frank on bun and top with 1/4 cup relish. Repeat with remaining ingredients. * Recipe tested in 700-watt microwave.
