3 lbs GROUND TURKEY
1/3 c chipotle chiles in adobo sauce, pureed
1 tsp kosher salt
1/4 tsp freshly ground black pepper
12 Slices Oaxaca cheese, sliced (may substitute Mozzarella)
12 Cemita buns (may substitute soft sesame seed buns), split and lightly toasted
6 Medium small to medium avocados, sliced
12 Very thin slices red onion
1 Head iceberg lettuce, shredded
3/4 c papalo leaves (may substitute cilantro sprigs)
Gently mix ground turkey with pureed chiles in adobo sauce, salt and pepper. Divide mixture into 12 equal portions and form into burgers.
Per Order: Grill or broil burgers 4 to 6 inches from heat on medium temperature grill. Cook for about 10-12 minutes, turning only once.
During the last 3 minutes of grill time, place 1 slice cheese atop burger. Continue cooking until cheese melts. Cook to an internal temperature of 165 degrees F.
To assemble the burgers, layer slices from 1/2 avocado on the bottom half of each bun. Stack with a cheese-topped burger, onion, lettuce and papalo/cilantro. Cover with bun tops.
