1 lb BONELESS WHITE or DARK TURKEY MEAT, cut into 1-inch cubes
2 tbsp freshly squeezed lime juice
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 tbsp vegetable oil
1/2 c onion, chopped
1/2 c green pepper, seeded and chopped
1 c chunky salsa
1 Clove garlic, minced
1 tsp dried oregano
1 c corn chips, crushed
1 c jalapeno Jack cheese, shredded
1/4 c green onions, chopped
1/2 c fresh cilantro leaves
Toss turkey with lime juice and season with salt and pepper.
In small skillet over medium heat, sauté turkey in 2 teaspoons oil for 2 to 3 minutes or until no longer pink; remove from pan and set aside. Add remaining oil, onion and green pepper to skillet and sauté until onion is translucent and green pepper is crisp-tender.
Fold in turkey, salsa, garlic and oregano. Spray an oven safe shallow baking dish with non-stick vegetable spray. Pour turkey mixture into dish. Top with corn chips and cheese.
Broil 2 to 3 minutes or until cheese melts.
Garnish with green onions and cilantro.
