Neapolitan Turkey Calzone



2-1/4 lbs canned diced tomatoes, well drained

1-1/2 lbs GROUND TURKEY, cooked and broken into small pieces

1-1/2 lbs Mozzarella cheese, grated

1/3 lb ripe olives, pitted, sliced and drained

1 tbsp dried basil leaves

1 tsp dried oregano leaves

Salt and freshly ground black pepper To Taste

6 lbs prepared pizza dough

Egg wash As needed



In a large bowl, combine tomatoes, cooked ground turkey, cheese, olives, basil, oregano, salt and pepper.

For each calzone: shape 4-ounces pizza dough into a 6-inch circle. On one-half of circle, place #8 scoop filling; fold over other half and seal edges.

Brush with egg wash. Bake in preheated 450 degree F oven for 12-15 minutes or until golden brown.
