1 tbsp unsalted butter
1/4 c shallots, finely chopped
2-1/4 lbs GROUND TURKEY
1 tsp salt
2 tbsp parsley, minced
1/3 c fresh bread crumbs
1/4 c chili sauce
1/2 tsp soy sauce
1 Large egg, lightly beaten
1/4 c milk
4-5 Strips TURKEY BACON
Wine mushroom sauce As needed
Garlic mashed potatoes As needed
Vegetable combo As needed
PREPARATION
Over medium heat, cook shallots in butter until translucent.
Combine turkey, shallots, salt, parsley, bread crumbs, chili sauce, soy sauce, beaten egg and milk.
Mix gently until combined.
Place in an ungreased loaf pan and top with turkey bacon slices.
BAKE
Place in a preheated 400 degree F. oven and bake for 20 minutes.
Reduce heat to 350 degrees F. and continue to bake for an additional 45 minutes or until a meat thermometer, inserted in center, registers 165 degrees F. Remove from oven and allow to rest for 10-15 minutes before slicing.
FOR SERVICE
Nap dinner plates with wine mushroom sauce and pipe on garlic mashed potatoes.
Place a combo of vegetables around the diameter of the plates. Shingle 2 slices turkey loaf atop potatoes. Each portion: about 5 ounces.
