New Potato and Turkey Ham Salad

Ingredients

1 c herb wine vinegar

1/2 c salad oil

1 tsp salt

2 tsp basil leaves

1/2 tsp freshly ground black pepper

6 lbs small red new potatoes, cooked and cubed

4-1/2 c celery, diced

3 c red bell pepper, seeded and chopped

1 c scallions, chopped

9 Large eggs, hard cooked and chopped

1 c mayonnaise

1 c sour cream

6 c TURKEY HAM, cubed

Fresh basil As needed

Directions


 



Whisk together vinegar, oil, salt, basil and pepper.


Add cooked potatoes, celery, bell pepper and scallions. Cover and marinate for 1 hour.


Combine eggs, mayonnaise and sour cream. Add to chilled potato mixture and fold in gently.


Fold in turkey ham.


Cover and refrigerate until thoroughly chilled.


Garnish each portion with fresh basil.
