2 lbs yellow onions
6 lbs SMOKED TURKEY BREAST, slivered
1-1/2 qt fresh parsley, minced
1-1/2 c roasted red pepper, sliced
1 qt olive oil
1 c sweet onion, minced
1-1/2 c freshly squeezed lemon juice
1-1/2 c white wine vinegar
1/2 c sugar
1/3 c mixed Italian herb seasonings, OR substitute dried basil
24 3-oz Italian herb focaccia rolls, split
Halve 2 pounds yellow onions lengthwise; place cut-side down and slice thinly.
Combine sliced onion, smoked turkey, parsley and red pepper.
Mix olive oil, minced onion, lemon juice, vinegar, sugar and herbs.
Pour dressing over turkey mixture and toss well to blend.
Cover and chill at least 2 hours to sweeten onion and blend flavors. Serve 1-1/3 cups atop split focaccia rolls.
