20 oz fresh mushrooms, cleaned and sliced
1 c onions, chopped
1 c carrots, peeled and diced
1 tsp dried thyme leaves
2 cloves garlic, crushed
2 tbsp vegetable oil
4 each turkey drumsticks
To taste salt and freshly ground pepper
4 c cooked rice
Preheat oven to 350 degrees F.
Combine mushrooms, onion, carrot, thyme and garlic in a shallow baking dish. Drizzle with oil and toss to cover all.
Arrange drumsticks on top of vegetables; sprinkle with salt and pepper, as desired. Cover tightly with foil and roast in a 350 degree F oven for 1 hour. Uncover, turn drumsticks and baste with juices.
Increase oven temperature to 400 degrees F. Roast, uncovered, basting once or twice, until drumsticks reach an internal temperature of 175 degrees F and are browned, about 30 minutes.
Slice meat from drumsticks and spoon vegetables and juices over turkey slices. Serve with rice.
