Ingredients

1 (6-lb) bone-in turkey breast, thawed and patted dry

1/2 tsp ground allspice

2 tsp chili powder

1 tsp ground cumin

1/4 tsp cayenne pepper

1/2 tsp black pepper

1 tsp canola oil


Balsamic-Apple Glaze

1/2 c diced red onion

1 c apple cider or apple juice

2 tbsp brown sugar

1/2 tsp ground cinnamon

1/4 tsp salt

2 tbsp balsamic vinegar

1-1/2 tsp cornstarch

1-1/2 c tart red apple, diced and unpeeled

Directions

Preheat the oven to to 325°F.

Blend together allspice, chili powder, cumin, cayenne and black pepper in a small bowl.

Gently loosen skin from turkey breast without totally detaching the skin and carefully rub spice mixture between the skin and breast.

Spray a roasting pan and V-rack with nonstick cooking spray. Place turkey on V-rack in the roasting pan.

Roast turkey breast in a preheated 325°F oven in the lower third of the oven until the internal temperature reaches 165°F, about 1 hour and 45 minutes to 2 hours+. Use a meat thermometer to check for doneness.

Allow turkey to rest for 15-20 minutes before carving.


Balsamic-Apple Glaze

Over medium-high heat and in a large, heavy nonstick skillet, heat oil. Add onion and cook until tender.

Add apple cider, brown sugar, cinnamon and salt.

Blend together balsamic and cornstarch until smooth and cornstarch in dissolved. Stir cornstarch mixture into skillet, blending well.

Bring to a simmer for 5 to 6 minutes or until apples are crisp-tender.

Remove from heat and let stand, about 5 minutes.

To serve, spoon 2+ tablespoons Balsamic-Apple Glaze over each portion of turkey.
