With ground turkey and panko breadcrumbs for a lighter touch, you’ll feel just fine popping a few of these croquettes during cocktail hour or at lunch. Don’t miss the mango salsa – a little fruit and acid are the perfect additions to bring these flavors together!
1 lb ground turkey
1/4 c cilantro, washed, dried, and chopped
1/4 c red peppers, finely diced
1/4 tsp salt
1/4 tsp pepper
1/2 c flour
3/4 c egg batter
1 c panko breadcrumbs
Oil for frying as needed
2 mangoes, skin removed and diced
1 Small red onion, diced fine
1 tsp cilantro, chopped fine
2 tsp honey
1 tsp champagne vinegar
Mix turkey with cilantro and red pepper. Season with salt and pepper.
On a sheet pan, form into one-inch balls; cover and chill for about 30 minutes
Dip turkey balls in flour, then in egg batter, then roll in panko breadcrumbs.
Deep fry croquettes to an internal temperature of 165F and golden brown.
Serve warm with Mango Salsa.
Toss mango with red onion, cilantro, honey and vinegar.
Season with salt and pepper. Cover and hold for service.
