Pavo Borracho (Drunk Turkey)

Ingredients

1 c oil

4 oz butter

8 lbs TURKEY TENDERLOINS, cut in 2-inch medallions

2 lbs seedless raisins

3/4 tsp cinnamon

3/4 tsp ground coriander

3/4 tsp ground cloves

3/4 tsp ground cumin

12 Cloves garlic, minced

2 c dry white wine

3/4 tsp salt

1-1/2 tsp pepper

3 c slivered almonds, toasted

4 c pimento stuffed olives, drained, sliced in two

1/2 c capers, drained

Directions

In a skillet, heat oil and butter. Saute turkey tenderloin medallions until golden.

Add raisins, all spices, garlic, white wine, salt and pepper. Cover and simmer over low heat until turkey is tender when pierced with a fork and all flavors have blended (approximately 1 hour).

Add almonds, olives and capers. Heat uncovered for 5 minutes.
