25 Each TURKEY TENDERLOINS
6-1/4 oz pecans, finely chopped
3/4 tsp salt
3/4 tsp sugar
2-1/3 tsp cayenne pepper
3/4 tsp paprika
3/4 tsp ground fennel
52 oz veal demi-glace
18 oz bourbon
1-1/8 lbs unsalted butter, cut in pieces
TURKEY TENDERLOINS
Combine finely chopped pecans and spices. Coat tenderloins with mixture, pressing well into tenderloins.
Sear tenderloins in a very hot pan.
Finish in 325 degree F oven for approximately 8 minutes.
Set aside.
BOURBON SAUCE
In small sauce pan, bring demi-glace and bourbon to a simmer; remove from heat.
Whisk in butter until blended; keep sauce warm.
Serve over turkey tenderloins.
