5 lbs pistachios, shelled
1 c dry bread crumbs
1 tsp dried rosemary, crushed
1 tsp dried thyme
1 tsp dried oregano
1 tsp dried tarragon
1/2 c olive oil
1 13-lb WHOLE TURKEY, fresh or thawed
To taste salt and freshly ground black pepper
In a food processor, grind pistachios to a powder. Mix pistachio powder, bread crumbs, dried herbs and oil together.
Pat the turkey dry with clean paper towels. Salt and pepper the interior and exterior of the turkey.
Sear turkey in a large sautoir.
Brush nut/herb mixture on the exterior of the bird, covering legs and wings as well as breast.
Place on a V-shaped rack in a shallow roasting pan. Roast turkey in a 325 degree F thermal oven for 3 hours and 45 minutes or until the interior temperature reaches 170 degrees F in the breast and 180 degrees F in the thigh.
Allow turkey to stand for 15-20 minutes before carving.
