4 tsp olive oil, DIVIDED
1/2 c onions, chopped
1 Large garlic clove, minced
1/2 lb tomatoes, seeded and chopped
3 tbsp herbs (basil, oregano, thyme, parsley), fresh, chopped (OR 1-1/2 tsp dried herbs)
Salt and pepper To Taste
4 (4-oz) TURKEY BURGERS, seasoned or unseasoned
4 Each pita loaves, 5 to 7-inch diameter
6 oz Mozzarella cheese, sliced
2 oz Parmesan cheese, grated
Heat 2 teaspoons olive oil in a heavy skillet over medium heat. Sauté onions and garlic in oil until soft. Stir in tomatoes and herbs; remove from heat. Season with salt and pepper.
Preheat oven to 450 degrees F.
Grill turkey patties, 4 inches from the heat source for 4-5 minutes on each side or until the internal temperature reaches 165 degrees F.
For each burger: brush both sides of pita loaves with remaining oil. Cover with 1 ounce sliced Mozzarella and 1/2 ounce Parmesan cheese. Place grilled turkey patty in center. Top with additional 1/2 ounce sliced Mozzarella and 1/4 to 1/3 cup tomato sauce.
Place on hot baking sheet; bake in preheated oven, until bread is crisp and cheese is melted.
