1 lb ITALIAN TURKEY SAUSAGE, casing removed, crumbled
1 Clove garlic, chopped
1/2 c onions, chopped
1 Can (14-1/2 oz) tomatoes, chopped
1 Can (6 oz) Italian-flavored tomato paste
2-1/2 tsp Italian seasoning or oregano
8 Each oven-ready lasagna noodles, uncooked
12 oz low-fat cottage cheese
2 c (8 oz) skim Mozzarella cheese, shredded
In 2-quart microwave-safe casserole dish, combine sausage, garlic, and onion; cover. Microwave at 100 percent power (HIGH) for 5 minutes, stirring halfway through cooking time.
Stir in tomato paste, tomatoes with juice and seasoning. Microwave, uncovered at 100 percent power (HIGH) for 5 minutes.
Lightly butter a 2-quart oblong microwave-safe casserole dish. Spoon 1/3 sauce (about 1-1/3 cups) over bottom of dish. Top with 4 lasagna noodles, breaking noodles to fit.
Spoon cottage cheese over noodles. Sprinkle half of Mozzarella over top of cottage cheese.
Spoon 1/3 more sauce over Mozzarella; top with remaining noodles.
Spoon remaining sauce over noodles, add remaining Mozzarella and cover with vented plastic wrap.
Place several layers of paper towel on bottom of microwave to absorb any spillovers.
Microwave at 100 percent power (HIGH) for 5 minutes. Reduce power to 50 percent (MEDIUM); microwave 20-25 minutes, or until noodles are tender.
