3 Large eggs
4 oz cold water
6 oz dry bread crumbs
3 oz Parmesan cheese, grated
4-1/2 lbs TURKEY CUTLETS
2 oz olive oil
1-1/2 qt spaghetti sauce
20-oz Mozzarella cheese, shredded
4 lbs dry spaghetti
Combine eggs and water and whisk thoroughly.
Mix bread crumbs and cheese together.
Pat turkey cutlets dry with clean paper towels. Dip cutlets in egg, then in crumb mixture.
Heat oil. Sauté 2 minutes or until cutlets turn white around the edges.
Turn and continue sautéing 3 minutes or until the internal temperature of 160-165 degrees F is reached.
Top each cutlet with 2-ounces of sauce. Sprinkle cheese over top of each cutlet and bake in a preheated 425 degree F oven for about 5 minutes or until the cheese is bubbly and golden brown.
Prepare pasta according to package directions. Drain and serve 5-ounces pasta with each cutlet.
