1/2 lb LEMON-PEPPER MARINATED TURKEY TENDERS
1 Each pizza dough, 12-inch round
1 oz olive oil
1-1/2 oz zucchini, very thinly sliced
1-1/2 oz carrot, peeled and thinly sliced
1-1/2 oz eggplant, thinly sliced
1-1/2 oz red pepper, seeded and thinly sliced
10 Cloves garlic, caramelized
1/2 oz Romano cheese, grated
2 oz Mozzarella cheese, shredded
1 tbsp fresh parsley, chopped
Grill turkey tenders. Slice into 1/4-inch strips.
Roll out a 12-inch pizza dough to 14 inches to create a thinner crust.
Drizzle pizza dough with olive oil.
Blanch zucchini, carrot, eggplant, and red pepper in boiling water for 20 seconds. Chill in ice water and dry thoroughly.
Top pizza with turkey strips, caramelized garlic cloves, and intertwine vegetable ribbons on top.
Top with cheeses.
Bake at 400 degrees Fahrenheit for 15 minutes or until golden brown.
Top with fresh parsley.
