Romaine Salad with Smoked Turkey and Bing Cherries

Ingredients

1 c extra virgin olive oil

1/3 c balsamic vinegar

1 tbsp stone ground mustard

1 tbsp honey

1/2 tsp salt

To taste freshly ground pepper

3 Heads romaine lettuce, medium chopped

1-1/2 c Feta cheese, crumbled

3/4 c scallions, diced

30 oz mandarin orange sections

3 c SMOKED TURKEY, cut into 1/2-inch cubes

2 c Bing cherries, washed, halved and pitted

Directions

Balsamic Vinaigrette

Whisk together oil, vinegar, mustard, honey, salt and pepper. Cover and store in refrigerator for service.

Salad Prep

Toss together lettuce, Feta, scallions, oranges and turkey. Drizzle 1 cup vinaigrette over salad and toss.

Drizzle remaining vinaigrette over cherries and toss to coat.

Arrange salads on entree plates or in shallow bowls. Sprinkle with cherries.
