1 c mayonnaise
1 tbsp chipotle in adobo, pureed
1 tsp ground cumin
1/2 tsp dried oregano leaves
1/2 lb OVEN ROASTED BREAST OF TURKEY, cubed
1/2 lb Muenster cheese, cubed
1 Small avocado, peeled and diced
1 tbsp diced purple onion
3 tbsp corn, fresh grilled
2 (10-Inch) red pepper wraps, cut into triangles
2 oz chipotle mayonnaise
Fresh cilantro for garnish As needed
CHIPOTLE MAYONNIASE
In a bowl, mix all the ingredients together well.
Cover, label, date and store under refrigeration for service.
ASSEMBLY
Combine turkey, cheese, avocado, onions and corn in a small bowl and gently stir once or twice to blend ingredients.
Arrange triangles around serving dish and add turkey mixture in the center of serving dish.
Drizzle 2 ounces Chipotle Mayonnaise over the chips (as shown in photo) with a small amount of sauce on each triangle.
Serve additional triangles, in a separate bowl, for dipping.
