1 Medium orange, well scrubbed
1 lb TURKEY CUTLETS
1 tsp dried thyme
1 tbsp olive oil
1/4 c chopped sweet onions
2 Medium pears, cored and sliced into thin wedges
Grate or zest orange, then juice orange. Measure 1/2 cup juice and 1 teaspoon zest; set aside.
Pat turkey dry with clean paper towels. Sprinkle with thyme and 1/2 teaspoon each salt and pepper.
Heat oil in a large, heavy nonstick skillet over medium heat. Add cutlets and sauté about 3 minutes per side or until lightly browned and internal temperature reaches 165 degrees F. Remove turkey from pan and keep warm.
Add onions to skillet and quickly sauté for 1 minute. Add pears, orange juice and zest to skillet; heat to simmer and cook 2-4 minutes to thicken sauce and slightly soften pears.
Briefly return turkey to pan to heat. Serve pear slices atop turkey.
