Sautéed Turkey Tenderloin with Fruit Chutney

Ingredients

20 (3-oz) TURKEY TENDERLOINS

5 large eggs

1/4 c skim milk

2-1/2 c plain bread crumbs

5 oz walnuts, chopped

5 oz all purpose flour

3 Red Delicious apples

1/2 fresh pineapple

3 oz golden raisins

3 oz black raisins

3 tbsp butter

3 oz brown sugar

To Taste salt and white pepper

3 oz butter substitute

To Taste salt and white pepper

Directions

Cover the tenderloins in plastic wrap. Lightly flatten tenderloins with a mallet or the flat edge of a chef's knife.

Prepare egg wash with eggs and milk. In a medium bowl, mix bread crumbs and nuts together.

Dredge turkey filets in flour, shake off excess.

Dip turkey in egg wash, then dredge in bread crumb/nut mixture. Cover and refrigerate.

Fruit Chutney

Peel, core, and dice apples and pineapple. Soak raisins in warm water to plump. Drain.

Heat butter in sauté pan over medium heat. Add apples, pineapple, brown sugar and raisins. Sauté for 2 minutes.

Reduce heat and simmer for 20 minutes or until cooked. Season to taste.

To Order

Heat 1 teaspoon of butter substitute in sauté pan over medium-high heat. Sauté 2 turkey filets for 1 minute per side. Oven finish at 350 degrees F until the internal temperature reaches 165 degrees F.

Portion 2 filets on a warm plate. Serve with 1-1/2 ounces fruit chutney.
