1 tsp salt and white pepper mixture
20 3 oz Each TURKEY BUTTERFLY
3 Bulbs garlic, whole
3 lbs yellow, medium onion, sliced 1/2-inch thick
1-1/2 oz butter, melted
1-1/2 oz olive oil
3 tbsp balsamic vinegar
To Taste salt and white pepper
3 oz butter substitute
3 tbsp fresh chives, chopped
Lightly salt and pepper turkey and refrigerate.
Roast whole garlic bulbs in 400 degree Fahrenheit conventional oven for 40 minutes. Cut off the top and squeeze out roasted garlic into a bowl.
Combine sliced onions, melted butter, olive oil, and balsamic vinegar in a roasting pan. Bake in 400 degree Fahrenheit oven for 30 minutes, stirring every 15 minutes. Onions should be browned and soft.
Mince the roasted onions and combine with the roasted garlic. Heat in a saute pan. Season to taste.
To Order: Add 1 teaspoon of butter substitute to saute pan. Saute turkey 2 minutes per side. Oven finish at 350 degrees Fahrenheit for 7-8 minutes in conventional oven.
Portion onto plate. Serve with 2 ounces of roasted garlic/onion mixture.
Sprinkle with chopped chives for a garnish.
