5 lbs frozen bread dough, thawed
2 lbs frozen hash brown potatoes, thawed
3 lbs TURKEY HAM, diced into 1/2-inch pieces
1-1/2 lb reduced-fat Cheddar or part-skim Mozzarella cheese, shredded
8 Large eggs
8 egg whites
1/2 c water
1 tbsp each dried oregano leaves, dried basil leaves and minced fresh garlic
For two pans: Roll out 2-1/2 pounds dough to fit each steamtable pan. Press/knead dough over bottom and up sides of pan. Set aside in warm place and let rise 30 minutes.
Sprinkle 1 pound potatoes over dough.
Portion 1-1/2 pounds (about 5 cups) diced turkey ham over potatoes.
Spinkle 3 cups cheese over potatoes.
In a separate bowl, blend together eggs, water and seasoning. Evenly pour 3 cups of liquid over each pan.
Bake in a preheated oven until golden and center is soft. Conventional oven: 350 degrees F for 1 hour. Convection oven: 325 degrees F for 45-50 minutes.
Cut each pan, 5x5, yielding 1-3/4 ounces poultry and 1-1/2 servings of grains/bread. Serve hot.
