3 Gallons water
3 lbs, 2 oz rotini pasta, dry
5-1/2 lbs TURKEY HAM, diced into 1/2-inch pieces
2 lbs fresh broccoli florets
1-3/4 lb carrots, shredded
7 oz black olives, drained and sliced
1 lb celery, diced
1-1/4 c vegetable oil
3 c white vinegar
1/3 c sugar
3 tbsp flaked basil
2 tbsp garlic powder
1 tbsp salt
1/2 tsp white pepper
Cook pasta in boiling water until almost tender. Drain and set aside.
In large mixing bowl, combine pasta, turkey ham, and vegetables. Toss gently to mix.
In separate mixing bowl or blender, mix oil, vinegar, sugar, basil, garlic powder, salt and white pepper.
Pour dressing over salad; stir to coat.
Cover and refrigerate until serving.
Mix lightly before serving.
Yields 50 1-1/4 cup servings with 1 ounce meat, 1/3 cup vegetables, and 1 serving grains/bread.
