2-1/2 lbs French bread slices, dried and cubed
3-1/2 lbs TURKEY HAM, diced into 1/2-inch pieces
3/4 lb low-fat part-skim Mozzarella cheese, shredded
3/4 lb reduced-fat Cheddar cheese, shredded
1 oz OR 1 c dehydrated green pepper bits
15 oz OR 3-1/2 c canned diced green chlies, drained
4 oz OR 1 c canned diced jalapenos, drained
24 Large eggs
24 egg whites
3 c cold water
1-1/2 tbsp garlic powder
1 tbsp dried oregano leaves
1 tbsp dried basil leaves
Portion 2-1/2 quarts bread cubes into two 12x20x2-inch prepared steamtable pans.
Portion 6 cups turkey ham over bread in each pan.
Combine cheeses and sprinkle 3 cups of cheese over turkey ham.
Combine green peppers and chilies. Divide and sprinkle over cheese
In a separate bowl, blend whole eggs, egg whites, water, garlic powder and Italian seasoning. Evenly pour (about 4-1/2 cups) over each pan.
Bake in preheated oven until puffy and golden brown. Conventional Oven: 325 degrees F for 1-1/4 hours. Convection Oven: 300 degrees F for 1 hour.
Cut each pan, 5x5, yielding 2 ounces meat and 1 serving grains/bread.
