1 c onion, coarsely chopped
1 red bell pepper, cut into 1/4-inch cubes
2 Cloves garlic, minced
2 jalapeno peppers, seeded and minced
1 Can (28 oz) tomatoes, undrained and coarsely chopped
1 tbsp chili powder
1-1/2 tsp ground cumin
1-1/2 tsp ground coriander
1/2 tsp dried oregano
1/2 tsp marjoram
1/4 tsp red pepper flakes
1/4 tsp ground cinnamon
1 Can (16 oz) black beans, rinsed and drained
2 c COOKED TURKEY, cut in 1/2 inch cubes
1/2 c fresh cilantro, coarsely chopped
4 tbsp reduced-fat Cheddar cheese, grated
In 3-quart microwave-safe dish combine onion, bell pepper, garlic, jalapeno peppers and tomatoes. Stir in chili powder, cumin, coriander, oregano, marjoram, red pepper flakes and cinnamon; cover dish.
Cook in microwave oven at HIGH (100% power) 10 minutes; stir halfway through. Stir in beans and turkey; recover dish. Cook in microwave oven at HIGH (100% power) 4 minutes or until heated through; stir in cilantro.
To serve, ladle into bowls and garnish each with 1 tablespoon cheese.
