Ingredients

1-1/2 lbs TURKEY CUTLETS

3 Each scallions, cut into 2-inch pieces

2 Cloves garlic

1 tbsp fresh ginger, peeled and thinly sliced

1/4 c fresh lime juice

2 tbsp soy sauce

2 tbsp Dijon mustard

1 tbsp vegetable oil

1/2 tsp hot sauce

24 Each bamboo skewers

1/2 c creamy peanut butter

1/3 c TURKEY BROTH

1/4 c soy sauce

2 tbsp sesame oil

2 tbsp garlic, chopped

2 tbsp fresh ginger, peeled and chopped

2 tbsp sugar

2 tbsp red wine vinegar

1 tsp hot sauce

Cut turkey cutlets into 6 x 1-1/4 x 1/4-inch strips. (Measurements will vary according to size of cutlets.) Place turkey strips in medium-size glass dish.


To prepare marinade, puree scallions, garlic, ginger, lime juice, soy sauce, Dijon mustard, vegetable oil, and 1/2 teaspoon hot sauce in food processor until well blended. Pour marinade over turkey and coat thoroughly. Cover and marinate 1 to 2 hours in the refrigerator, tossing occasionally.


Thread one strip of turkey onto each skewer, keeping turkey flat. Discard any remaining marinade.


Place skewers on microwave-safe platter. Cover with wax paper and microwave on HIGH for 3 minutes; turn 1/2 turn and micowave for another 2-1/2 to 3 minutes.


Note: Time will vary with different microwave ovens, and skewers may need to be cooked in batches, depending on size of microwave. Remove turkey skewers from microwave and serve with peanut sauce.


 




Peanut Sauce



In food processor, blend all ingredients until smooth and thoroughly blended. Store in airtight container at room temperature until ready to serve.
