3 tbsp canola oil
1 qt chopped sweet onion
4 lbs GROUND TURKEY
2 qt canned tomato sauce
1/4 c chili powder
1/4 c oregano leaves
1/4 c ground cumin
2 tsp freshly ground black pepper
1 tsp salt
16 Sandwich buns, split and toasted
1-1/2 c fresh cilantro, finely chopped
1 c Dijon mustard
3/4 c mayonnaise
48-oz slaw mix
Heat oil in a large skillet over medium heat. Add onion and ground turkey. Sauté until onion is tender and turkey is no longer pink.
Add tomato sauce, herbs and seasonings. Cook, stirring occasionally for about 12-15 minutes.
Cover and hold warm for service.
In a large bowl, blend cilantro, mustard and mayonnaise together.
Stir in slaw mixture, blending well.
Spoon turkey mixture on bottom halves of toasted buns. Place 2 to 3 tablespoons slaw mixture atop each. Cover with bun halves.
Garnish plates with remaining slaw mixture.
