A staple of comfort foods everywhere, but a version you can let sit and forget! Slow cooker meatloaf just like grandma made it will be hot and ready to serve after the work day.

Ingredients

1 Medium onion

2 tsp olive oil

1 c chopped onion

2-1/2 lbs Ground Turkey

1/2 tsp kosher salt

1/2 tsp pepper

1/4 tsp dried thyme leaves

2 tbsp Worcestershire sauce

2 tbsp ketchup

2 Large eggs, beaten

22 Saltine crackers, crushed

1/4 c ketchup

2 tbsp brown sugar

1 tbsp vinegar

Directions

TURKEY LOAF: Slice medium onion into thick slices and line bottom of crock pot with onion slices. This will make it easier to remove the loaf after cooking.

In a skillet, heat oil over medium heat. Add onion and saute until softened.

Remove from skillet and in a large bowl, combine onion with remaining ingredients. Mix well.

Form into a loaf shape to fit the slow cooker. Place loaf into crock atop onion slices. Use a rubber spatula to shape and pull loaf away from the sides of the crock, allowing 1/2-inch all around the loaf.

GLAZE: Combine glaze ingredients and spoon over top of loaf.

Cover and cook on low for 6 to 7 hours or until food thermometer registers 165 degrees.
