2 tbsp oil
1 Medium onion, cut into 1-inch pieces
1 Medium red bell pepper, seeded and cut into 1-inch pieces
1 lb SMOKED TURKEY SAUSAGE, cut into 1/2-inch slices
1 Large carrot, peeled and cut into 1/2-inch slices
1 tbsp Old Bay® Seasoning
1/2 tsp garlic powder
1/8 tsp crushed red pepper
1 Large bay leaf
4 c TURKEY BROTH or chicken broth
3 tbsp tomato paste
1-1/2 c orzo
1 (14-oz) can black-eyed peas, drained
1 Large zucchini, qtered and sliced
In a large saucepan, heat oil on medium-high. Add onion and bell pepper and cook, while stirring, for 2 to 3 minutes and vegetables are soft.
Add turkey sausage and carrots. Stir 5 minutes or until sausage is browned.
Stir in Old Bay, garlic, red pepper, bay leaf, poultry broth and tomato paste. Return to boil, stirring frequently.
Stir in orzo and black-eyed peas. Reduce heat to medium and simmer 5 minutes.
Add zucchini. Cook additional 5 minutes or until orzo and zucchini are tender, stirring frequently.
Remove bay leaf before serving.
