1 tsp canola oil
1 lb SMOKED TURKEY SAUSAGE, cut into 1/2-inch slices
4 c shredded cabbage and carrot classic cole slaw mix (without dressing)
2 Medium tart apples, peeled, cored and cut in 1-inch chunks
1 c apple cider
1 tbsp Dijon mustard
In a heavy, large nonstick skillet, heat oil over medium-high heat. Add sausage and brown 4-5 minutes, stirring occasionally.
Add slaw mix, apples, cider, mustard and 1/4 teaspoon each salt and pepper. Immediately reduce heat to low.
Gently simmer 10 minutes, stirring occasionally.
Portion each serving atop cooked rice in shallow soup bowls.
