1/2 lb SMOKED TURKEY BREAST, sliced
1 Large Head romaine lettuce, washed, drained and chilled
1/2 lb freshly cooked shrimp, peeled, deveined and chilled
1 Medium sweet red pepper, seeded and diced
2 green onions, chopped
1/2 c unroasted cashew pieces
3/4 c light mayonnaise
1 tbsp soy sauce
1 tbsp cold water
1 tbsp brown sugar
1/2 tsp sesame oil
1/4 tsp ground ginger
Cut turkey slices into thin strips approximately 1/2 inch long.
Tear romaine into bite-sized pieces and place into large salad bowl.
Add turkey, shrimp, red pepper and onion. Toss lightly.
Meanwhile, toast cashew pieces in a single layer on a baking sheet at 350 degrees F. for 6-8 minutes or until lightly browned. Set aside.
In a medium bowl, whip together the mayonnaise, soy sauce, cold water, brown sugar, sesame oil and ginger. Pour over salad and toss to coat evenly.
Garnish with toasted cashews.
