Smoked Turkey Chili with Garlic, Sun-dried Tomato and Tarragon

Ingredients

5 lbs GROUND TURKEY

1 lb diced Spanish onion

1/2 c minced fresh garlic

1 tsp crushed red chili pepper

1 c minced sun-dried tomato

1 tsp dried tarragon

1 #10 Can diced tomatoes

1/2 #10 Can tomato puree

1 #10 Can kidney beans, rinsed and drained

1 Gallon TURKEY STOCK

To Taste salt and freshly ground black pepper

Directions

Saute ground turkey, onion, garlic, red chili pepper, sun-dried tomato and tarragon.

Using a stove top smoker, add cooked ground turkey mixture and smoke for 20 minutes.

Combine smoked turkey mixture and remaining ingredients in a stockpot. Cook 30 minutes and season to taste.

Serve with creamy polenta, Fontina cheese and smoked garlic crostini.
