6 oz goat cheese, room temperature
6 oz cream cheese, room temperature
1/3 c sun-dried tomatoes, rehydrated and julienned
3 tbsp fresh thyme, chopped
3 tbsp fresh parsley, chopped
1-1/2 tbsp fresh tarragon, chopped
To Taste Kosher salt and freshly cracked black pepper
4 16-inch lavosh cracker bread
2-1/2 lbs SMOKED TURKEY BREAST, thinly sliced
4 avocados, thinly sliced
4 tomatoes, thinly sliced
10 oz onion and radish sprouts, washed and dried
In a food processor, blend goat and cream cheeses together until creamy. Fold in sun-dried tomatoes and herbs. Season with salt and pepper.
With a spray bottle, lightly spray lavosh cracker bread with water. Let stand for 5 minutes until cracker bread has softened.
When lavosh is soft, spread each lavosh with 3 ounces of herbed cheese blend. Cover each evenly with 10 ounces sliced smoked turkey. Layer with avocado and tomato slices. Sprinkle with sprouts. Season with additional Kosher salt and black pepper.
Gently, but tightly roll the lavosh "jellyroll" fashion. Wrap tightly with plastic wrap and chill for up to 12 hours. Repeat with remaining ingredients.
Cut each roll in 3-inch sections.
