6 oz olive oil
1 lb onion, diced into medium-sized pieces
1/2 lb celery, diced into medium-sized pieces
1/2 lb carrots, diced into medium-sized pieces
1/2 lb green bell pepper, diced into medium-sized pieces
12 Cloves garlic, crushed
1 lb corn, roasted and cut from cob
1 lb chayote squash, peeled and cubed
2 qt TURKEY STOCK
2 tbsp chipolte base
2 tbsp ground cumin
2 tbsp paprika
1/3 c cilantro, freshly chopped
2 qt tomato puree
1 qt diced tomatoes in juice
2 lbs SMOKED TURKEY BREAST, diced into medium-sized pieces
In a saucepot, add the oil and saute the onions, celery, carrots, green peppers and garlic until softened.
Add the corn and squash and saute for 2 minutes.
Add the remaining ingredients. Simmer for 30 minutes and adjust seasonings.
