3/4 c olive oil
3/4 c orange juice
2/3 c sherry vinegar
6 oz shallots, thinly sliced into strips
2-1/2 tbsp orange zest
1 tsp kosher salt
1/2 tsp freshly ground black pepper
4-1/2 lbs OR 3 qt cooked lentil beans
1-1/2 lbs OR 1-1/4 qt cooked beets, diced 1/2-inch
2 c orange segments, seeds removed and halved
3 lbs SMOKED TURKEY, diced 1/2-inch
1 qt ripe olives, halved
12 oz watercress
In a large mixing bowl, whisk together olive oil, orange juice, sherry vinegar, shallots, orange zest, salt and pepper. Divide vinaigrette into two large mixing bowls and set aside.
Toss lentil beans, beets and orange segments into one bowl with the vinaigrette. Cover and hold for service in the refrigerator.
Mix smoked turkey, olives and watercress with the remaining bowl with vinaigrette. Cover and hold for service in the refrigerator
Per order: spoon approximately 5 ounces of chilled lentil mixture onto a plate. Top with 3 ounces of chilled smoked turkey mixture.
