Smoked Turkey Salad with Cashews and Sherry Dressing

1-1/2 c mayonnaise

1/2 c medium dry sherry

2 tbsp fresh lemon juice

1 tbsp sugar

1/2 tsp salt

1 tsp freshly ground pepper

2-1/4 lbs SMOKED TURKEY, diced

1-1/2 lbs seedless California grapes

1 qt celery, sliced thin

1/2 c scallions, sliced

1/2 c fresh parsley, chopped fine

1 c salted cashew pieces, roasted


Sherry Dressing

Mix together mayonnaise, sherry, lemon juice, sugar, salt and pepper. Hold covered in the refrigerator.

Salad Assembly

Toss together turkey, grapes, celery, scallions and parsley.

Cover and hold for service, no longer than 3-4 hours.

At time of service, toss in cashews. Add sherry dressing, mixing with all other ingredients.

In addition to a great salad entree, the recipe can be used as a sandwich filling or in pastry as an appetizer.
