1 lb SMOKED TURKEY SAUSAGE, thinly sliced
1/4 c canola oil
1/2 c onion, chopped
1/4 c flour
1/2 tsp black pepper
3 c milk
6 oven ready lasagna noodles, uncooked, Or substitute cooked and drained lasagna noodles
6 hard cooked eggs, peeled and sliced
1 c Provolone cheese, grated
2 tbsp Parmesan cheese, grated
2 tbsp parsley, chopped
In a large skillet, saute turkey sausage over medium heat until cooked through. Remove from pan with slotted spoon and drain on paper towels. Drain pan of any drippings and wipe pan clean with paper towels.
Heat oil in same skillet and saute onion over medium heat until tender. Add flour and pepper, stirring until smooth and thick. Continue to cook and stir for one minute. Stir in milk and cook until mixture thickens, stirring all the while. Simmer for one minute.
Spoon 3/4 cup of sauce into bottom of a 13x9x2-inch baking dish. Layer with three pieces of lasagna, and half of the sausage, eggs, sauce and Provolone. Repeat, ending with Provolone.
Sprinkle top with Parmesan. Bake in a preheated 350 degree F. oven for 25-30 minutes or until the mixture is heated throughout.
