1 lb FRESH CHIPOTLE SEASONED TURKEY SAUSAGE
1-1/4 c chunky salsa
8 (6 to 7-Inch) soft flour tortillas
1 c shredded Mexican cheese blend
1 c chopped fresh tomato
1/2 c chopped onion
1/2 c sour cream
1 c shredded crisp lettuce
1/2 c cilantro leaves
Over medium heat, squeeze sausage from casings into a large heavy nonstick skillet. Cook, breaking up sausage, with back of a wooden spoon, into small pieces. Cook until sausage is lightly brown.
Reduce heat and stir salsa into cooked sausage. Gently simmer for 2 to 3 minutes.
In another heavy ungreased skillet, heat tortillas, one at a time over medium heat, about 10 seconds per side, turning with tongs. Remove from skillet and cover with clean towel to keep warm.
Spoon about 1/3 cup sausage mixture down center of each tortilla. Top each with cheese, tomatoes, onions, sour cream, lettuce or cilantro. Fold each in half and serve immediately.
