9-1/4 lbs GROUND TURKEY
1 qt tomato paste
1 qt cold water
8-oz taco seasoning
25 3-1/2-Inch plain whole bagels, cut in half
1-1/4 lbs part-skim Mozzarella cheese, shredded
2-1/2 lbs lowfat Cheddar cheese, shredded
2 lbs, 2 oz fresh lettuce, shredded
1-1/4 lbs fresh red ripe tomatoes, diced
1 #10 Can tomato salsa
Brown and drain ground turkey.
Add tomato paste, water and taco seasoning mix. Cook until mixture bubbles. Simmer, uncovered, for about 30 minutes.
Place open-faced bagels, cut side up, on a lined hotel pan.
Portion 1/4-cup (#16 scoop) turkey mixture on each bagel half, spread to cover.
Mix two cheeses together. Sprinkle 1-ounce cheese mixture on each bagel half, atop the turkey mixture.
Bake in a preheated 350 degree F convection oven until cheese melts.
Meanwhile, mix lettuce and tomatoes together.
Serve each pizza bagel half with 1/2 cup mixture of shredded lettuce and tomatoes.
Drizzle salsa atop pizza bagel and lettuce mixture.
